Everyday Food Thai Beef with Chiles and Basil Over Coconut Rice
Although I am not generally a Martha Stewart fan, one of the newer shows on PBS, Everyday Food, caught my attention as it seemed to be less fussy and more regular cooking so I’m trying their Thai Beef with Chiles and Basil Over Coconut Rice. It was shown as one of those simplified easy to make weekday meals. This should be a pretty good test because in general I tend to flop on Asian foods, although since this doesn’t require stir frying I should be ok.

This too was a success. However once again, not quite what I was expecting. It was quick, easy and tasted good but it was definitely an Americanized version of Thai food. For a midwestern meat, potatoes and pasta girl, it was perfect, not too hot and no strong flavors. Definitely don’t forget the lime juice at the end as that really makes a difference. For my husband though it was a little bland and he, in his usual fashion, immediately went for the Tabasco but said it wasn’t the right flavor mix. He did like it though, and had second helpings (sans Tabasco).
That does bring me to the portions. I know we all have gotten used to giant portions but the recipe says it serves six and unless everyone is on a very strict diet or it was an appetizer, you couldn’t possible serve six people and even four might be a stretch if any of them were hungry teenagers.
Overall I would make it again. It was done in less than 1/2 hour with minimal prep and just two pans. Probably not for the true Thai fan though.
