From the Bread Pudding Capital of the World – Las Vegas Cherry Almond Bread Pudding

If you have ever been to a Las Vegas Buffet, I’m sure you’ve seen the bread pudding. There must be a lot of left over bread here because every buffet from the cheapest to the most expensive has it . . . and they have it every day. Most are so so and some are absolutely awful. Since I am vehemently opposed to raisins, and I love cherries, I went in that direction. Here’s my version, which in my opinion at least, was great!
Here’s the ingredients:

2 cups Sugar 2 tsp Cinnamon
2 pinches salt 12 eggs 3 cups heavy (whipping) cream |
3 Tbsp almond extract 12 cups French bread cubes (1 inch)
3 cups Frozen cherries 2 cups sliced almonds 2 Tbsp butter |
In a very large mixing bowl whisk the eggs, then add the sugar, cinnamon and salt. Whisk in the cream and almond extract.

Add the bread and let soak (covered with plastic wrap in the fridge) at least an hour or overnight to soak up the custard.

Preheat the oven to 250 degrees.
Mix in the cherries and pour into a 9 x 13 inch buttered baking pan, sprinkle with almonds and cover with foil. Place the pan inside a large roasting pan and add water to come up about half way up the smaller pan.

Bake for two hours, then increase the temperature of the oven to 300 degrees and remove the foil , allowing the top and the nuts to brown.
Can be served with a splash of cream, cream anglaise, chocolate sauce or whipped cream – pretty much whatever topping you like!
