Quiche Lorraine
Happy Mother’s Day! I’ve had too many bad experiences eating out on Mother’s Day (and Valentine’s Day). It’s always too crowded and the staff usually doesn’t want to be there and are overworked so now I prefer to stay home. This year it was very quiet and we had a nice brunch with Quiché Lorraine, bagels and fruit, although it was the first one since I’ve been a mother that there were no children – they did both call and the youngest will be back Tuesday for the summer (and leftovers). I’ve used this recipe many times and it always comes out great! The original is from Cooks Illustrated and can be found at http://www.cooksillustrated.com/recipes/detail.asp?docid=5958 I do make a few changes, adding as much extra bacon and cheese as I can fit into a deep dish pan, no nutmeg and 1/2 T each of oregano and basil.
