Slow Cooker Pork Shoulder (Pulled Pork)

Slow Roasted Pork Carnitas

Due to the oven explosion (I’ve been promised the part will be here soon), I had to revise my plan for the pork shoulder roast I had for today.  Normally roast it slow in the Dutch oven as I really like the almost crunchy outside to give a little texture to the shredded meat, but circumstances being what they are, the slowcooker came out.  It turned out great and of course I have enough for an army so will be freezing the majority.  I used the juices instead of water to make the rice and it gave it a lot of flavor.  

Slow Cooker Pork Shoulder (Pulled Pork)

8   lbs      Pork shoulder

1              head garlic, peeled and separated

1   Tbsp   chili powder

1   Tbsp   Cajun spice

1   Tbsp   red pepper flakes

1   Tbsp   ground red pepper

2   Tbsp   dried Mexican Oregano

1   Tbsp   cumin

1   Tbsp   paprika

4              limes cut in quarters lengthwise

2              bell or jalapeño pepper, chopped  (optional)

1   large   onion coarsely chopped

Procedure

1   Rinse the meat and remove any large chunks of fat, but don’t try to get it all
2   Mix all the spices together in a small bowl  (for the rest of my family this was perfect but a little spicy for me so you can reduce or eliminate the red pepper if you prefer)

3   With a sharp knife, poke holes in the meat and stuff them with the garlic cloves

4   Rub the entire roast thoroughly with the spice mixture

5   Place in the slow cooker along with the limes, onion and peppers if used, for 8-12 hours on low

6   Remove the lime wedges, then take two forks and shred the meat, mixing it with the juices to serve

    Thanks, I love mine but don’t use it as much anymore. When the kids were small and I had a long commute it was great. My son, who’s idea of cooking was completely limited to microwave Hot Pockets is now living in a dorm at college has discovered the joy of crockpot, although I think his roommate still handles most of the job except the eating.
