Potato and Leek Soup
This week I’ve been very busy! Thursday we went to a new farmers market. It was very small, (keep in mind this is the desert) but they did have the largest leeks I’ve ever seen. Yesterday I made an Almond Cheesecake with a Chocolate Ganache top for a bakesale/carwash at the local middle school (and I got my semi-annual car wash too). The mother of one of the students was badly burned in a fire and they had a great turnout to support the family. I’ll add that recipe, and the one I made for dinner, schnitzel and some fried baby potatoes (also from the farmers market) soon.
I have to admit that, although I think I have probably had leek soup at some point, I have never made it and never really even thought about making it but they looked good so I thought I’d give it a try. After checking several recipes, I choose to try Emeril Lagasse’s http://www.foodnetwork.com/recipes/emeril-lagasse/potato-and-leek-soup-recipe2/index.html which I followed except of course, I doubled the amount of bacon! It was a pretty quick and relatively healthy lunch (by my standards anyway) and it came out great.
